Sodium ascorbate is an organic substance with the chemical formula C6H7O6Na, white to yellowish white crystalline powder or granules, odorless and slightly salty in taste. The decomposition temperature is 218℃. It is relatively stable in dry state. When exposed to light, the color deepens. After absorbing moisture, it is slowly oxidized and decomposed in aqueous solution. It is more soluble in water than ascorbic acid (62g/100mL), and the pH of 10% aqueous solution is about 7.5.
Product properties
Sodium VC, also known as D-sodium erythorbate, is white to yellowish-white crystalline particles or crystalline powder, odorless, tasteless, and decomposes at a melting point above 200 °C; it is quite stable when exposed to air in a dry state. However, in aqueous solution, it oxidizes with air, metal, heat and light, and is easily soluble in water. The solubility at room temperature is 16g/100ml, and it is almost insoluble in ethanol. The pH value of 1% aqueous solution is 6.5-8.0.
