Methyl aspartame is commonly known as aspartame, its chemical formula is C14H18N2O5. It exists as a white powder at room temperature. It is a natural functional oligosaccharide with high sweetness, not easy to deliquescence, and no caries. Diabetic patients can edible. Aspartame can be added to beverages, pharmaceutical products or sugar-free chewing gum as a sugar substitute because of its extremely low calorie content and high sweetness. The calorie of aspartame is about 16.75kJ/g, and 2.8 mg/dl of aspartame can make people feel sweet, so the heat generated by a small amount of aspartame can be ignored. Solubility, slightly soluble in water (about 10 g/L at room temperature), slightly soluble in ethanol (0.37% soluble in ethanol, insoluble in oil). Appearance, white crystalline powder or granules.

Applications

Aspartame functions as a sugar substitute. It is about 200 times sweeter than sugar. Its calories are negligible because very few calories are needed to be sweet, although a gram of aspartame has about 16.72 kJ calories.
